Hey y'all!! How are you today? It's Wednesday!! Yay!
Y'alls prayers must have worked because guess who is feeling just like new again?
Bean! She's back! I should have known the lethargy would only last for a matter of hours. She woke up yesterday morning full of zest, as though she hadn't even had surgery. When we arrived at my parents' house last night, she went absolutely crazy with excitement to see them. Her favorite humans!
Dad is taking care of Bails for me today since I have class tonight and,
though she *thinks* she is 100% better, she still needs a few more days
of rest before I can take her back to daycare. I'm so thankful to have
him and my mom around to help me out with her when I really need it.
Aren't parents the best?!
Bailey was so excited to see my mom and dad that she was practically doing flips and I had to put her in a headlock just to get her to calm down. Absolute nutter. If only I could bottle that energy up! Thanks for all your positive thoughts and prayers. They really made a difference!
While at my parents' house for the evening, I started snooping around for breakfast ideas. That's when I discovered that they had way too much oatmeal, so my dad and I got to experimenting with baked oatmeal! I've been seeing it all over the blogisphere lately and wanted to try it for myself. We made Banana Nut Bread Baked Oatmeal and Apple Pie Baked Oatmeal. The banana flavor needs some tweaking, and though the apple turned out fantastic, I want to work on it a little bit too to minimize the ingredient list and work on the sugar content. For now, pictures will have to do:
Daddy-daughter dates go from shooting ranges to baking oatmeal... Totally normal, right?! I love it.
I've got to get back to my accounting schoolwork and then head on to class, but I'm hoping to have some perfected baked oatmeal recipes for you by early next week! Thanks to everyone out there who has been posting inspirations lately (namely Alissa and Laura).

ReplyDeleteBailey is SO CUTE! I wish we lived near each other so she and Casey could have play dates! Casey always gets super excited to see my parents too, they love that. That baked oatmeal looks delicious, I can't wait for the recipe! Banana nut sounds fantastic!

DeleteLove hearing how close you are with your family!! After you mentioned the shooting range, I immediately wrote my mom to tell her to call a range near us and check out prices so I can take my dad there for his bday when I'm visiting the states in march! Cant wait :)
