Southwest Scramble

Whew! This weekend was a whirlwind!  I cannot believe Monday is already here (and almost gone... apologies for the late post.)  My upcoming week is packed with lots of time with friends, Bailey and family and before I know it, I'll be starting school.  Our first day is Monday the 14th.  Definitely not ready for that, so I'm going to relish in the freedom I have this week and squeeze in as much time as I possibly can with all the people I love before I suddenly have no social life at all.

Living it up in my social life means that just barely a week into Junk-Free-January, I've failed about forty-five times.  It's going to keep happening too.  Especially because tonight is girl's night, the Bachelor is back, and we found the recipe for these

In the spirit of full disclosure, let me share my Junk-Free-January weekend fails:



Friday, I went to dinner with a friend and drank wine. I ate crispy white bread and hummus and scallops with some kind of amazing sauce.  And then I had a beer.

Sunday, I went to church and then brunch with one of my best girlfriends and this happened:

There actually are lots of veggies under there and I barely finished half of that plate, but still.

Then dinner came along and another friend called and somehow I ended up with this in front of me:


At least I'm eating healthy when I'm at home?  Sigh.  Mini cupcakes don't count, right?  Especially since it was a sweet potato cupcake.  Surely those are healthy... I'm going to keep telling myself that they are.  And pretend I don't see the empty cheese dip, chips basket and pitcher of beer in that last photograph.

Thankfully, Saturday I did a little better than the rest of the weekend and cooked up a {healthier} southwest scramble for dinner. 


2 eggs, 1/2 yellow onion, 1 clove garlic, 2 tbsp hot salsa, 1 tbsp Trader Joes' corn salsa, a sprinkle of Parmesan cheese and several handfuls of spinach.  All topped with half an avocado.  Yum!

To make: 
  1. Mince garlic and dice onion.  Add 1 tsp olive oil to a pan and bring to medium heat. Add garlic and onion and cook until tender. 
  2. Add salsas to garlic and onion mixture and stir to combine. 
  3. Add spinach to pan and cook until slightly wilted. 
  4. Add eggs to pan and stir to combine.  Cook until completely done. 
  5. Sprinkle scramble with Parmesan and stir to combine.  Top with avocado slices and serve immediately.

When I wasn't eating junk out with friends, I was spending time with Bailey at the dog park!  Both Saturday and Sunday were fairly nice days in Atlanta, so we headed over to the park and I let her run around with the other pups!


She made tons of friends and was wiped out after each trip.



Sunday, my friend Katie (with whom I indulged in cupcakes that morning), Stella and Traci joined us and we had an awesome time letting the pups play with each other in one of the grassy areas of the park.

It felt so nice to spend some time with my friends outside!  We human girls hung out and talked while the puppies played.  It was refreshing to do something a little different.  Today is another beautiful day in Atlanta and I'm wishing I wasn't at work so I could get outside and go for a run! 

Despite my indulgences, I have tried to make healthy decisions and am working on finding that balance we all need.  Lots of water, time dedicated to exercise and usually healthy (though this post doesn't reflect that!) eating choices.  Time will only tell how things will go once I begin school, but I've done some preparation and found a place to help me take care of Bailey while I'm in class, so I have the feeling it will all work itself out.  I may have to do a lot more food prep on the weekends in order to ensure that I'm eating healthy meals throughout the week, but I'm ready and prepared for that!

Do you indulge on the weekends and eat healthy during the week or do you find balance throughout each day?  I'm usually a weekend indulger and a saint during the week (except on girls' nights)!

  1. I'm just going to live vicariously through you. Surely sweet potato cupcakes are healthy in mini portions. That looks SO flippin' good. :)

  2. I'm with Laura on the sweet potato cupcake thing! Yours looks so cute!! I think you're totally right - it's all about balance and you've gotta live up social experiences while you can. If you ask me, spending quality time with puppies and friends is just as important as eating clean and working out!

  3. I had a hard time balancing the food in my life and felt soooo guilty if I indulged in a friend's birthday cake or had my favorite ice cream on a warm summer night. It was a vicious cycle and I finally figured out that no one was expecting perfection from me, except for me. I am not a fitness model or a pro athlete who gets paid to look their best. I am a human, and humans eat cake sometimes!! I am much much better these days about enjoying food with friends and eating with a better balance. Just roll with it, know there will be plenty of opportunities in the coming days to eat healthy. :)

  5. I failed Junk-Free January too. Went to a bar on Friday (the one that I was telling you about) and had some wine. Oh well.

  8. Haha sometimes it's best to just enjoy yourself! I definitely eat very, very well on weekdays (for the most part) and indulge Thursday/Friday-Sunday. It seems to balance out just fine for me--and keeps me sane!

  9. That scramble looks incredible!! I am such a sucker for anything with southwest flavors, and avocados, so this is a home run!! I think I find balance daily, and find when I tell myself I can't have something that makes me want it more, so I don't deprive myself of anything. How I see it is if you are stressed about trying to be healthy it kind of defeats the whole purpose!! Especially if you are getting healthy stuff in as well as the occasional indulgence. :)
